Nigerian Okra Soup Recipe: Classic Draw Soup with Seafood and Greens

Ingredients
- 4 cups fresh okra, finely chopped
- 1 lb cooked beef or fish
- 1 cup cooked stockfish, flaked
- 1/4 cup palm oil
- 1/2 cup ground crayfish

Preparation Steps
- Bring stock to a simmer with cooked beef or fish, stockfish, seasoning cubes, pepper, and salt.
- Add palm oil and simmer for 8 minutes.
- Stir in chopped okra and ground crayfish. When to Mix: add okra after the broth is seasoned and bubbling so the draw texture develops quickly.
- Cook uncovered for 5 to 7 minutes, stirring gently to keep the okra bright.
- After the okra thickens, fold in spinach or ugu leaves and cook for 2 minutes.
