Pounded Yam and Egusi Soup Recipe: Classic Nigerian Swallow and Soup
A complete guide to making smooth pounded yam and rich egusi soup with melon seeds, palm oil, leafy greens, stockfish, and assorted meat.
Ingredients
- 3 lb white yam, peeled and cubed
- 6 cups water for boiling yam
- 2 cups ground egusi melon seeds
- 1/2 cup palm oil
- 1 1/2 lb assorted meat or beef, cooked
- 1 cup cooked stockfish, flaked
- 1/2 cup ground crayfish
- 1 large onion, chopped
- 2 cups meat stock
- 2 scotch bonnet peppers, blended
- 2 cups spinach or bitter leaf, sliced
- 2 tsp salt, divided
- 2 seasoning cubes
Preparation Steps
- Boil yam cubes in salted water for 20 to 25 minutes until very soft.
- Drain, reserve 1 cup of the hot yam water, and pound the yam in a mortar or process in a stand mixer until stretchy and smooth. When to Mix: add reserved yam water 1 tbsp at a time only when the yam looks dry.
- For the egusi, mix ground egusi with 1/2 cup water to form a thick paste.
- Heat palm oil in a pot over medium heat for 2 minutes, then saute onion for 3 minutes.
- Spoon in the egusi paste in small lumps and let it fry undisturbed for 4 minutes before stirring.
- Add meat stock, cooked meat, stockfish, crayfish, blended pepper, seasoning cubes, and salt. When to Mix: stir after the stock enters the pot so the egusi breaks into soft curds instead of dissolving completely.
- Cover and simmer for 25 minutes, stirring every 7 minutes to prevent scorching.
- After the soup thickens, fold in spinach or bitter leaf and cook for 5 minutes.
- Serve the egusi soup hot with smooth pounded yam.
