Ingredients

  • 2 cups cooked black-eyed peas
  • 1/3 cup red palm oil
  • 1 large onion, chopped
  • 3 tomatoes, chopped
  • 2 tbsp tomato paste
  • 1 scotch bonnet pepper, minced
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1 cup vegetable stock
  • 3 ripe plantains, sliced
  • 2 cups vegetable oil for frying plantains

Preparation Steps

  1. Heat palm oil over medium heat and saute onion for 5 minutes until soft.
  2. Add tomato paste and fry for 4 minutes until it darkens.
  3. Stir in tomatoes, scotch bonnet, smoked paprika, and salt. When to Mix: add the beans only after the tomato sauce has reduced and the oil begins to rise.
  4. Add cooked black-eyed peas and vegetable stock, then simmer for 20 minutes.
  5. Mash a few beans against the side of the pot to thicken the stew.
  6. Fry sliced plantains in hot oil for 2 to 3 minutes per side until caramelized.
  7. Serve red red with fried plantains on the side.
