Fufu and Ghanaian Light Soup Recipe with Tender Meat
Soft fufu served with a bright Ghanaian light soup made from tomatoes, pepper, onion, ginger, and tender meat.
Ingredients
- 2 lb goat meat or chicken pieces
- 8 cups water
- 4 medium tomatoes
- 1 large onion, halved
- 2 scotch bonnet peppers
- 1 tbsp fresh ginger, grated
- 2 cloves garlic
- 2 seasoning cubes
- 1 1/2 tsp salt
- 4 cups prepared cassava-plantain fufu or fufu flour prepared by package directions
Preparation Steps
- Season meat with salt, seasoning cubes, ginger, garlic, and 1/2 chopped onion. Steam in a pot for 10 minutes.
- Add water and bring to a boil.
- Add whole tomatoes, remaining onion, and scotch bonnet to the broth and cook for 12 minutes.
- Remove softened vegetables and blend until smooth, then pour the blend back into the pot. When to Mix: return the blended vegetables only after the meat has released its first stock.
- Simmer for 45 to 60 minutes until the meat is tender and the soup tastes clean and peppery.
- Prepare fufu separately, stirring over heat until smooth and elastic. When to Mix: add water gradually and stir continuously to prevent lumps.
- Serve fufu in a bowl with hot light soup ladled around it.
