Nigerian Suya Recipe: Spicy Grilled Beef Skewers with Yaji Spice
Street-style Nigerian suya with thin beef strips coated in yaji spice, grilled until smoky, and served with onions and tomatoes.
Ingredients
- 1 1/2 lb beef sirloin, sliced thin
- 3 tbsp ground roasted peanuts
- 1 tbsp paprika
- 1 tsp cayenne pepper
- 1 tsp ground ginger
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 2 tbsp vegetable oil
- 1 medium red onion, sliced
- 2 tomatoes, sliced
Preparation Steps
- Soak wooden skewers in water for 30 minutes.
- Mix ground peanuts, paprika, cayenne, ginger, garlic powder, onion powder, and salt to make yaji-style spice.
- Pat beef dry, brush with oil, and coat generously with the spice blend. When to Mix: add the oil before the spice so the yaji clings evenly.
- Thread beef onto skewers and marinate for at least 1 hour.
- Grill over high heat for 3 to 4 minutes per side until charred at the edges.
- Rest for 5 minutes, then sprinkle with extra spice and serve with sliced onion and tomatoes.
Serving Notes
Serve hot and adjust pepper, salt, and stock to your preferred taste. This recipe is designed for home cooks who want authentic West African flavor with clear timing cues.
